Mushroom Dashi

Ingredients

  • 4 cups water

  • 5 grams dried kombu, about a 4 by 6 inch piece

  • 5 grams dried mushroom, such as shiitake or porcini

Method

  • Boil some water, and use it to soak the dried mushroom. Leave for 1 hour.
  • Rinse off the kombu with water.
  • Boil water, and reduce to simmer.
  • Add rinsed kombu and soaked mushrooms, with their water, to the pot.
  • Let simmer on low for 15 to 20 minutes.
  • After simmering, pick out the kombu sheet and mushrooms, and compost.
  • Strain the remaining broth.
  • Store in the fridge, up to a few days.

Notes

  • You can make a big batch and freeze it, if you want. Not sure where to get kombu and dried mushrooms - Nations will almost certainly have them though!
  • 2023-12-09 - Could maybe try making this in the Instant Pot? Low pressure with kombi and mushrooms together in the pot, 20 mins, let sit afterwards for 20 mins. Could also add green onion ends at some point, maybe? There's this good little bit from PBS and Anthony Bourdain on the momofuku ramen broth, which starts like dashi broth... kombu at 60 celcius for 45 minutes, dried shiitakes simmered for an hour, scallion trimmings, onions, carrots... and a bunch of meat! Maybe a very small dash of liquid smoke could help here? Or char the onions and carrots in a really hot oven, or over a wood fire, before making the broth?
