Cucumber, smashed

Ingredients

Method

  • Smash-chop the cucumber into a-lil-smaller-than-bite-sized pieces
  • Sprinkle with coarse salt
  • Drizzle with olive oil
  • Toss together to coat
  • Let sit for a couple of minutes... then serve and enjoy!

Notes

  • There's an episode of Chef's Table - Pizza with Yoshihiro Imai where he makes some smashed cucumber. I was watching the show while on a totally liquid diet while I was dealing with some medical issues, and dang I've never wanted to eat cucumber so badly before.
  • Maybe try a lil dash of rice vinegar as well? Might be good with soy sauce subbed in for part of the salt too? Or just keep it simple - salt and olive oil seems like it could be really nice. Maybe serve with a lil bit of white rice!
