Soy Yogurt

Ingredients

  • 100 grams soy-milk

  • 5 grams yogurt starter (probiotic capsules, or existing starter)

Method

  • Sterilize your yogurt pots. You can boil them in water. Or you can bake them at 400 fahrenheit for 10 minutes.
  • Heat the soy milk to about 42 degrees celcius (108 fahrenheit). This will help activate the starter! To test with touch, you should be able to hold your knuckle in the milk for about 8 seconds. The milk should feel warmer than the body, but not hot.
  • Add the starter to the milk, and mix together thoroughly. (Note: I'm thinking I'll actually start with a dairy yogurt starter! Grab about a cup, experiment with amounts... maybe 2 tbsp per cup of raw soy milk?) (Note: in the inspo recipe, author uses 4 probiotic capsules for what looks to be 500 ml of soy milk).
  • Add the mixture to the sterilized pots. Leave them for about 8 hours in a warm place (above 30 degrees celcius)... or use a yogurt maker if you have one! You can use an Instant Pot with the yogurt setting if you want.
  • Yogurt should be set after about 8 hours. Your first batch may not be the best... may be worth doing a couple of batches just to get the starter culture acquainted with the food you're feeding it (that is, the soy milk!)
