Tres Leches Cake

Ingredients

  • CAKE BASE

  • four large eggs, separated

  • 1/2 cup sugar

  • 1/4 cup oil, such as canola oil, or melted butter

  • 1 teaspoon vanilla

  • pinch of cream of tartar (optional)

  • 1.5 teaspoons baking powder

  • 3/4 all purpose flour (about 100 grams?)

  • TRES LECHES

  • 1 cup regular milk

  • 1 cup sweetened condensed milk

  • 1 cup evaporated milk

  • GARNISH

  • whipped cream

  • cinnamon, for dusting

  • candied maraschino cherries, slice into quarters if you want

Method

  • preheat the over to 300 F
  • lightly grease an 8x8 inch baking pan
  • separate the egg whites and yolks. set the egg whites aside in a mixing bowl
  • thoroughly blend the egg yolks, beating on high until foamy.
  • add in the sugar, oil, and vanilla to the egg yolks. beat again until foamy. set aside
  • sift the flour and baking powder together
  • beat the egg whites, until peaks just begin to form. add the cream of tartar. continue to beat until hard peaks form.
  • be ready to act quickly for the next steps
  • gently fold the dry flour mix into the wet egg yolk mix. avoid overmixing, as the cake will not rise as well.
  • gently fold the egg whites into the mixture. again, mix as little as possible while getting things combined.
  • pour and scrape the mixture into the 8x8 baking pan
  • bake at 300 F for ~ 35 minutes, until golden brown. cake is done when toothpick inserted in the center comes out clean
  • if cake never rises, you may need to buy fresh baking powder, increase the amount of baking powder, and be more careful to avoid over-mixing.
  • if cake falls while cooling, then you may need to adjust the baking time and temperature. A lower baking temperature for longer time may help the cake's crumb become more dry and firm.
  • let cake cool
  • while cake is cooling, mix together all three of the tres leches
  • poke cake all over with a toothpick or skewer
  • pour the tres leches onto the cake. let sit in fridge for 2-8 hours, until liquid is absorbed
  • before serving, whip the whipping cream. spread it over the cake. dust with cinnamon, then garnish with maraschino cherries.

  • Tried with Lucy, switched up the recipe method to avoid over-mixing while the baking powder is initially active
  • Would like to try making this with plant-based ingredients… definitely seems like a fun challenge!
