Tofu Chocolate Mousse

Ingredients

  • 350 grams tofu

  • 1 cup dark chocolate

  • 0.5 cups maple syrup

  • 1 tbsp orange zest, plus more to garnish (from 1 orange)

  • 1 tsp vanilla paste or extract

  • 0.5 tsp salt

  • 1 tsp finely ground aleppo peppers (or to taste), plus more for garnish

  • Garnish options: whipped cream, shaved chocolate, orange zest, extra pepper, salt... fresh berries, fruit, or anything really!

Method

  1. Thoroughly drain the tofu, using a mesh strainer for example
  2. Melt the chocolate in a double boiler by placing the chocolate in a heat-proof bowl, and set over a half-filled pot of simmering water. Once the chocolate is melted, set it aside to cool for 10-15 minutes.
  3. Place the well-drained tofu, maple syrup, orange zest, vanilla, salt, and aleppo pepper in the food processor. Blitz until smooth.
  4. Add the chocolate and blend until silky
  5. Divide the mixture between 6-8 ramekins or serving glasses and let it sit in the fridge for at least 2 hours, this will help it set a bit more. Serve with desired garnish.
