Sweet Potato Mac and Cheese Sauce

Ingredients

  • 1 medium sweet potato (about 165 grams)

  • 1 tbsp lemon juice

  • 0.33 cup raw cashews (or... sub firm tofu?)

  • 0.25 cup nutritional yeast

  • 0.5 tsp garlic powder

  • 0.5 tsp onion powder

  • 0.5 tsp salt

  • 1 cup unsweetened non-dairy milk (soy milk)

Method

  • Peel and dice sweet potato. Get it cooked - you can boil it, but I kinda wanna try steaming it... Some other cooking methods below...
  • To bake sweet potato in microwave, poke a bunch of holes with a fork. Microwave on full power for 3 minutes. Then rotate the potato, and microwave on full power for another 2 minutes.
  • To steam sweet potato in a rice cooker with a steam setting. Add water to the cooker, and the steamer basket, and use the steam setting. Steam for 25 minutes for a whole sweet potato, or 15 to 20 minutes for smaller diced potato.
  • To boil sweet potato, boil on high heat until fork-tender (usually about 10 to 25 minutes).
  • To bake sweet potato in oven, wash and dry well. Preheat oven to 400 F. Poke a bunch of holes with a fork. Place on a baking sheet, rub with olive oil. Bake for about 45 minutes.
  • Put everything in a blender, and blend it up!
  • Heat and serve with a short pasta, like macaroni, rotini, penne, etc.
