Sweet & Sour Sauce

Ingredients

  • BEST LOOKING ONE

  • 1 tbsp neutral oil

  • 1 slice fresh ginger

  • 1 star anise (or substitute cloves and fennel seeds?)

  • 1/4 cup tomato paste

  • 2/3 cup sugar

  • 2/3 cup water

  • 3/4 cup white vinegar

  • 1 tbsp soy sauce

  • 1/4 cup juice or syrup (maybe blended frozen pineapple?)

  • 2 tbsp corn starch, dissolved in 2 tbsp water

  • KETCHUP-BASED RECIPE

  • 1 cup pineapple juice

  • 3/4 cup packed light brown sugar

  • 1/3 cup rice vinegar

  • 3 tbsp ketchup

  • 2 tbsp soy sauce

  • 2 tbsp corn starch, dissolved in 2 tbsp water

  • CIDER VINEGAR & KETCHUP RECIPE

  • 1/2 cup cider vinegar

  • 1/2 cup light brown sugar

  • 1/4 cup water

  • 1/4 cup ketchup

  • 1 tbsp corn starch, dissolved in 1 tbsp water

Method

  • Make the cornstarch slurry and set it aside
  • Bring all other ingredients to a boil in a saucepan

Notes

  • Haven't tried yet, but would like to!
  • Another dumpling sauce: soy sauce, rice vinegar, water in equal parts, add brown sugar, sesame oil, garlic, and green onion, blend it all together
