Spinach and Orange Salad

Ingredients

  • BASE

  • Spinach

  • YUMS

  • Orange, half a large Seville orange (a whole mandarin orange can be nice instead)

  • Almonds, slivered or crushed (2 tbsp)

  • Poppyseeds (2 tsp?)

  • Toasted sesame seeds (2 tsp?)

  • A lil bit of finely minced shallot or red onion (maybe?) (2 tbsp?)

  • Cooked mushrooms (maybe?) (2 tbsp?)

  • Beans? Chickpeas maybe? (3 tbsp?)

  • DRESSING

  • Orange zest (1 tsp?)

  • Orange juice, from your orange (2 tbsp?)

  • Olive oil (1 tbsp?)

  • Sesame oil (1 tsp?)

Method

  • For PREP, you need your cutting board and knife and a bunch of small bowls. For ASSEMBLY, you’ll be throwing things together. Pausing after each step to clean up can be really nice, then there’s no cleanup after you eat!
  • PREP
  • Spinach: Wash and dry the spinach. A salad spinner works great here! Stack the spinach leaves, with the place where each leaf turns into a stem lined up. Starting from the stem side, cut the stems up into fine little bits, scrape those aside, and then cut the leaves up into fork-sized chunks.
  • Orange: Wash and dry your orange. Use a microplane to scrape some orange zest, set that aside for your dressing. Cut part of your orange into segments. Use another part of your orange for juice - you want a few tablespoons.
  • ASSEMBLY
  • Whisk your dressing together. Maybe some other ingredients it’s missing, I’m not sure, kind of need to try it first.
  • Prepare all the yums. Put em in little bowls, it’s fun.
  • Toss it all together! And enjoy.

Notes

  • Based on the salad that Granny Sandra makes a lot
  • Have tried making it once, it was delicious!
  • Fun fact: oranges technically resemble berries! So, this salad could qualify as a GBOMBS salad. Last time I made it though, I didn’t add red onion, cooked mushrooms, or chickpeas. Definitely want to try it again, and add those ingredients next time.
