Soy milk in pressure cooker
Ingredients
Method
- Soak soybeans overnight
- Rinse soybeans
- Blend with 2 cups of water until smooth
- Put fine-mesh steamer basket in Instant Pot.
- Add a pinch of salt and 4 cups of water
- Add blended soybean mixture. Intent of steamer basket is to keep solids from getting to the bottom, which in turn should prevent a burnt crust on the bottom.
- Pressure cook for 5 minutes + 25 minutes natural release. After 25 minutes, vent it!
- Carefully lift out the steamer basket, which should have a bunch of soy milk solids in it
- Rinse everything immediately, it's much harder to do once things dry out
- For smoother soy milk, strain the remaining liquid with a cheesecloth
