Soy milk in Instant Pot

Ingredients

Method

  • Soak soybeans overnight
  • Rinse soybeans
  • Blend with 2 cups of water until smooth
  • Put fine-mesh steamer basket in Instant Pot.
  • Add a pinch of salt and 4 cups of water
  • Add blended soybean mixture. Intent of steamer basket is to keep solids from getting to the bottom, which in turn should prevent a burnt crust on the bottom.
  • Pressure cook for 5 minutes + 25 minutes natural release. After 25 minutes, vent it!
  • Carefully lift out the steamer basket, which should have a bunch of soy milk solids in it
  • Rinse everything immediately, it's much harder to do once things dry out
  • For smoother soy milk, strain the remaining liquid with a cheesecloth
