Rainbow Salad

Ingredients

  • Caesar Dressing. You can improvise a dressing with oil, vinegar, lemon, and so on, but that’s basically what the caesar dressing is but with mayo, and the mayo really helps make things creamy and tasty!

  • Endives

  • Cucumber

  • Celery

  • Carrots

  • Apple

  • Radishes

  • Nuts, like pistachios or almonds, crushed up

  • Feta Cheese from Tofu is a great addition too

Method

  • Wash and rinse the ingredients, get em all ready to cut
  • Chop all the ingredients, I cut things lengthwise, then chop into pieces a few good millimetres thick. I remove the seeds from the cucumber when cutting them lengthwise.
  • Toss all the veg with the dressing! Then top with the nuts and tofu if you’re using them, and toss again if you want

Notes

  • Apples might seem out of place (sweet fruit with a caesar dressing?) but I love it. I guess you should ideally use tart apples, but I like things sweet and i don’t like buying more than one different kind of thing so I just use royal gala.
  • I dig the versatility here, i feel like you could swap in a lot of different things here - romaine or fennel or spinach as the base instead of endives, and really any not-too-strong-tasting veg. Would probably be great with pears instead of apples too.
