I guess you should ideally use tart apples, but I like things sweet and i donβt like buying more than one different kind of thing so I just use royal gala.\n* I dig the versatility here, i feel like you could swap in a lot of different things here - romaine or fennel or spinach as the base instead of endives, and really any not-too-strong-tasting veg. Would probably be great with pears instead of apples too.\n",
