Oatmeal, overnight

Ingredients

  • DRY INGREDIENTS

  • 0.5 cups oats

  • 2 teaspoons chia seeds

  • pinch salt

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon ground flax (optional)

  • WET INGREDIENTS

  • 3/4 cup plant milk

  • 2 teaspoons maple syrup

  • 1/2 teaspoon vanilla extract

Method

  • Sift together the dry ingredients
  • Mix in the wet ingredients, starting with the plant milk.
  • Put it in the fridge for at least 8 hours. Overnight is usually perfect.

Notes

  • Based on Angela Liddon's "Effortless Overnight Oats", "Oh She Glows" recipe was page 29 or something. Have dropped the banana and bumped up the cinnamon though
  • Seed boost option - bump the chia to 1 tbsp, and add 1 tbsp of ground flax, and 1 tbsp of ground hemp hearts
  • Tea option - heat up the mylk, then steep it with your favourite tea, before mixing everything together.
  • Nuts option - crush your favourite nuts, and mix them in before soaking overnight. I like pistachios and almonds.
  • Nut butter option - mix in a teaspoon of your favourite nut butter for extra creaminess.
  • Spice options - experiment with other spice blends, rather than using cinnamon. I like cardamom for example. Nutmeg is also nice.
  • Great served with any in-season fresh fruit. Nice tart apple chunks can work nicely.
  • If you like raisins in your butter tarts, raisins in overnight oats are nice. They get all plump, yum.
  • If you really like whatever plant milk you’re using, try serving with plant milk drizzled overtop. Heck you could take it to another level and heat up the plant milk, cook it down a bit to thicken, add some sweetener, and then cool it overnight along with the oats. Kind of like oatmeal and cream.
