Oat Bars

Ingredients

  • 142 grams salted butter

  • 2/3 cup brown sugar

  • 1/3 cup honey

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 2 3/4 cups quick cooking oats

Method

  • Line a 9 by 9 inch baking dish with parchment paper
  • Preheat the oven to 325 degrees
  • Drop some portion of the oats (maybe half?) in a blender and pulse them a bit if you want a less crumbly, more chewy bar (note: haven't actually tried this, mostly speculation).
  • In a medium saucepan, combine the butter, sugar, honey, salt, and cinnamon
  • Melt the mixture over medium heat until the butter has melted and the brown sugar is mostly dissolved. Remove from heat.
  • Add the oats to the saucepan and mix into the butter sugar mixture until the oats are fully coated.
  • Press the mixture into the baking dish. Pat down the top with a spatula for a flat and even surface - this will also help the bars be less crumbly.
  • Bake at 325 for 25 minutes, or until the edges are just getting golden
  • Once done, cut into a 4 by 4 grid immediately, before they're cooled (Might make sense to press them down again first to avoid crumbliness, I'm not sure).
  • Let cool completely, then lift out of the pan using the parchment paper lining.
  • Store in an airtight container in the fridge up to 5 days. Or freeze for longer.

  • Find a base recipe... then come up with a shortlist of fun ingredients...
    • Oats, PB, nuts, seeds... dried fruit? Bulk Barn it up!
    • Goal is high calorie, kinda crunchy, kinda sweet, without being garbage.
