Mushroom crisps

Make nice, crispy mushrooms in the oven, using time instead of effort.

Ingredients

  • 12 cremini mushrooms

  • 1 tbsp soy sauce

  • 1 tbsp olive oil

  • 1 tsp sesame oil

  • 1 tsp apple cider vinegar

  • 1 tsp maple syrup

  • 1 tbsp all-purpose flour (or starch of any kind)

Method

  • Preheat oven to 375˚F
  • Rinse mushrooms.
  • Pat mushrooms dry completely, using a dish towel or paper towels if you hate trees. The more water you can remove now, the better they will crisp up! If they're soggy, they might not crisp up at all.
  • Chop mushrooms into small pieces. I go for halving the mushrooms, then slicing them along the "stem" dimension into ~ 1/8 inch thick slices.
  • Toss mushrooms with olive oil, soy sauce, apple cider vinegar, pepper, and maple syrup, until coated and glossy.
  • Dust with flour, tossing to mix.
  • Prepare a sheet pan with a large piece of parchment paper
  • Spread mushrooms into a single layer on the parchment paper, with space between them to allow them to dry out.

Notes

  • Should really try with a mix of mushrooms, it'd probably be better.
