Kalbi Marinade from Roy Choi Masterclass

Ingredients

  • 1 large onion, peeled and roughly chopped

  • 1 cup peeled garlic cloves

  • 1 bunch scallions (about 8 scallions), roughly chopped

  • 5 tbsp toasted sesame seeds

  • 1 cup sugar

  • 2 large kiwifruits

  • 2 cups soy sauce

  • 1 cup mirin, apple juice, or water

  • 2 cups fresh orange juice

  • 1 cup toasted sesame oil

Method

  • Add solid stuff to the blender first, otherwise it'll splash
  • Add the liquids. Note measurements don't need to be exact!
  • Taste your food. Taste your raw ingredients! Taste it right after you blend it! Taste it after it's been sitting for a while!
  • Pop it in a jar! Stores nicely in the fridge, for at least a couple days, even just under a week - until it starts to smell funky.
  • Instructions from Masterclass: Add the onion, garlic, scallions, sesame seeds, and sugar to a clean blender jar. Halve the kiwifruits, and use a spoon to scoop out the flesh. Add the flesh to the jar of a blender, and toss out the skins. Add the remaining ingredients to the blender, and purΓ©e the mixture on high speed just until a smooth sauce forms, about 10 seconds. Pour the marinade into a sealable jar or container, and store it in the refrigerator for up to 1 week.

Notes

  • It's vegan!
  • The base is essentially a marinade. But it can act as a mother sauce, and with a bit of creativity in how it's used and combined with a few other key ingredients, can be used for vegetables, can become everything from a braising liquid, to a sauce, to (most importantly) a cooking liquid. It can also be used as a vinaigrette.
  • Would love to try this with tofu... maybe on the oven tofu I usually do? Or try roasting pretty much any vegetable? This is making me wanna try out like an electric super-hot grill that could imitate a barbeque... maybe I could get that set up by my window for ventilation? Something like this grill pan off Amazon or this big double-burner griddle thing? Incidentally maybe I should get a double-burner induction cooktop?
