Fries in the oven

Ingredients

  • Potatoes [link], cut into fries

  • FOR BOILING

  • 8 cups water

  • 1 teaspoon salt

  • 1 tablespoon apple cider vinegar

  • FOR BAKING

  • Olive oil (about 2 tablespoons per pound of potatoes)

  • Salt (to taste)

  • Pepper (to taste)

Method

  • Adjust the oven rack to the middle position. Place a rimmed baking sheet in the oven, we’ll be pre-heating it inside the oven.
  • Preheat the oven to 425˚F.
  • Fill a big pot with water, salt like it’s the sea. Add the apple cider vinegar too.
  • Boil until the fries are just starting to become tender, about 8-10 minutes.
  • Drain but leave the potatoes in the pot.
  • MAYBE - try patting the fries dry first? Or not. Leaving them in the hot pot seems like it might evaporate some of the water?
  • Add to the pot a bit more olive oil than you think. Season with salt and pepper to taste.
  • Give the pot a few gentle shakes. This shaking should mush up the potatoes just a little bit. Take care not to mush them up too much.
  • Remove the pre-heated baking sheet from the oven.
  • Spread the fries on the pre-heated baking sheet.
  • Cook for 20 minutes, then turn the fries over, then cook for another 20-25 minutes. (You could experiment with not turning the fries over, apparently that might work fine).
