Fried Rice

Ingredients

  • 2 cups cooked rice

  • 2 tablespoons peanut or vegetable oil

  • 1/2 onion, finely chopped

  • 1/2 cup carrots, finely diced

  • 1/2 cup peas, frozen is fine

  • 4 cloves garlic

  • nub of ginger

  • 2 tablespoons soy sauce (or 3?)

  • 1 teaspoon simple syrup (or not)

  • 1 tablespoon butter

  • 1/2 cup chopped green onion

  • tofu-scramble

Method

  • Heat 2 tablespoons oil in the pan
  • SautΓ© onion, about 30 seconds
  • Add carrots, sautΓ© a lil more
  • Add garlic and ginger, sautΓ© about 30 seconds
  • Add peas if they're frozen
  • Add rice, and fry, stirring constantly, until there are no clumps and it starts to get a lil crispy
  • Add butter, stir till melted in and distributed
  • Add soy sauce, and optional simple syrup, both to taste
  • Add tofu scramble
  • Serve and enjoy!

Notes

  • Tried once, on 2023-06-26! Didn't have peas, used spinach instead. Loved the ratios I got there - used 100 g dry short-grain rice, which I'd cooked and left in the fridge overnight.
