Eggs, pickled, with dill

Ingredients

  • 8 soft-boiled eggs

  • 450 mL white vinegar

  • 150 mL apple cider vinegar

  • 6 small red shallots

  • 4 cloves garlic

  • 12 sprigs fresh dill

  • 1 tsp coriander seeds

  • 4 small bay leaves

  • 45 mL white sugar

  • 3 mL salt

Method

  • Bring everything but the soft-boiled eggs and dill to a simmer. Whisk to make sure everything is dissolved. Simmer for 5 minutes. Let cool a bit (you don't wanna break the jars).
  • Layer fresh dill, garlic, onions, and eggs (in that order) into jars, trying to get things packed nice and tightly, but without squishing stuff.
  • Pour the pickling brine overtop. Hopefully you'll have a little extra brine - don't throw it away, reserve it in another jar! It'll be super useful to top up your brine levels once you start eating the eggs. Making sure everything is covered is a great way to help prevent anything from going weird!

  • 2023-12-10 - I used 8-minute eggs, still jammy on the inside! Divided really nice and evenly between two wide-mouthed mason jars (500 mL I think?). Would love to get those nice "no-leak plastic" lids like I have for the smaller jars, to avoid any chance of corrosion... but that'll come later, I think! I forgot how much I love pickled stuff... would love to get more into it again! Pickled red onions feel like a great place to go next - great with hummus! On sourdough!
