Egg and cheese bites

Ingredients

  • 3 eggs

  • 1/6 cup full-fat cottage cheese

  • 1/6 cup cheddar cheese

  • salt and pepper (optional)

  • cubed potato (optional)

  • onion & garlic (optional)

  • fresh chives (optional)

  • spinach (optional)

Method

  • Preheat oven to 300 degrees fahrenheit
  • Add the eggs, cottage cheese, and cheddar cheese to a blender
  • Blend until combined
  • Silicone muffin tins, spray them, pour egg mixture about halfway up
  • Bake at 300 degrees fahrenheit for 30 to 33 minutes

Notes

  • Can store in fridge or freezer, reheat later
  • Add-ins are optional!

  • There's also this TikTok. SautΓ©e about 3/4 cup cubed potato, 1/2 cup red onion in olive oil with a bit of salt, until tender. Then mix 8 eggs, 1/2 cup shredded cheddar cheese, 1/4 cup milk, salt and pepper. Whisk to combine. Add the potato and onion mixture, and also some chopped spinach. Mix until combined. Spray muffin tin and silicone cups, fill em up almost to the top, bake for 25-30 minutes until set.
