Egg Avocado Breakfast Sandwich

Ingredients

  • 2 slices bread

  • 2 eggs

  • 3 grams green onion

  • 1 tsp butter, plus more for bread

  • 1 tsp olive oil

  • 1/2 avocado (~ 35 grams avocado)

  • 1/2 tsp lemon juice

  • 10 grams cheddar cheese

Method

  • If the bread is frozen, remove it from the bag to defrost!
  • Get a lil prep station ready, drop your serving plate there for now.
  • Halve the avocado, mash it with the lemon juice. Set with the prep station.
  • Grate the cheddar cheese. Set with the prep station.
  • Crack the eggs, remove the fiddly bits, and whisk together. Set aside
  • Wash the green onion, then finely mince it, and add to the egg.
  • Toast the bread. I like it just barely browned. Let it sit in the toaster for a minute while you make the eggs. This will give it time to cool so it stays a little crispy even after you butter it.
  • Melt the 1 tsp of butter along with the 1 tsp olive oil in a pan over low heat. Add the egg mixture as soon as the butter is melted, and stir to combine.
  • You should now have, ready to go, an avocado mix, shredded cheddar cheese, and your egg mix, with bread in the toaster. You're ready to scramble some eggs!
