Cucumber Avocado Gazpacho

Ingredients

  • 1.5 cups water

  • 2 large avocados, ripened, cut into chunks, about 1.5 cups

  • 2 cups English cucumbers, about 2/3 a large cucumber

  • 3 large cloves of garlic

  • 0.25 cup diced red onion

  • 2.5 tablespoons fresh lime juice

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon olive oil

  • 2-3 teaspoons sriracha

  • salt to taste, around 0.5-1 teaspoon

  • 6 large ice cubes, or as needed

Method

  • Grab your blender
  • Chop anything down that's too big
  • Throw everything in the blender, blend till smooth
  • Adjust with seasoning, sriracha, and acids to taste

Notes

  • Based on Oh She Glows for Dinner recipe
  • Top with sliced green onion, sliced cuke, or croutons, if you want
