Crispy Tofu

Delicious crumbly, crunchy protein bits from simple ingredients

Ingredients

  • 1/2 block firm tofu (175 grams)

  • 1.5 tbsp olive oil (doesn’t have to be exact)

  • 1 tbsp corn starch

  • 1/8 tsp salt

  • 1 tsp soy sauce (optional)

  • 1 tsp apple cider vinegar (optional)

  • 1 tsp nooch (optional)

  • 1/8 tsp black pepper (optional)

Method

  • Press the tofu to remove moisture. (Easier to do this with a whole block, then use half of it). To do this, make a stack of cutting board - paper towel - tofu - paper towel - cutting board. Put some heavy books on too (cookbooks work well!). Leave for 30 minutes.
  • Once the tofu is pressed, preheat the oven to 400 F.
  • In a bowl large enough for all the tofu, mix the oil, corn starch, and salt. You can add in the optional ingredients here too, or really add in any other dry spices and flavors here if you want (eg pepper, garlic powder, chili flakes, orange zest, etc).
  • Tear the pressed tofu into chunky bits, toss em in the bowl, and toss it all together to evenly coat the pieces.
  • Line a baking tray with a silicone baking sheet, or parchment paper. Or you could oil the tray if you have neither. Spread the tofu on the tray, giving it lots of space.
  • Bake at 400 F for 25-30 minutes. You can turn it if you want - i find the silicone baking sheet does a good job of keeping the contact surface temperature even, so i don’t need to turn it, but if you’re using parchment paper or an oiled tray it’s probably best to turn the pieces halfway through.
  • Let cool to let em get a lil crispy before using!

Notes

  • The torn or crumbled bits can range in size - smaller bits will get very crispy, larger bits will be chewy. Once you've made it once or twice, you'll get a feel for what size you prefer.
