Cold Noodle Salad

Ingredients

  • SPECULATIVE

  • Noodles, cooked and drained and cooled (wheat noodles I think, kind of eggy, but very white, spaghetti thickness)

  • Carrot, cut into rough and small julienne

  • Cucumber, cut into rough and small julienne

  • That Korean yellow pickled radish stuff (danmuji, I guess? Daikon that’s pickled somehow)

  • Tasty fried tofu, then soaked in some kind of brown sugar soy sauce mix

  • Sauce, soy saucy, rice vinegar too probably, maybe a lil sesame oil, definitely a little bit of something spicy

  • Cilantro to garnish

  • Sprinkled peanuts to garnish

Method

  • Note sure, I need to figure it out.

Notes

  • This was a favourite dish of mine from a restaurant in Toronto called Mean Bao
  • Haven’t made it yet… but would love to try it!
