Beets, boiled

Ingredients

  • Beets

Method

  1. Scrub Beets – clean the beats and remove any dirt or dust.
  2. Cut off roots and stems – this will make them easier to peel later
  3. Pressure Cook – Place a rack in the bottom of an instant potΒ and add 1 cup water. Place beets on the rack in a single layer and cook according to the time chart depending on the beet diameters and desired doneness.
  4. Cool and Peel – once beets are cool enough to handle, you can peel the skins.
  • TIME CHART
  • Pressure cook high, followed by a quick pressure release.
  • Note: If you want a faster cooking time, you can cut the beets into smaller pieces, and base the cooking time on the diameter or longest dimension of the cut beets.
  • Very small beetsΒ (1.5” to 1.75” diameter) – 15 minutes
  • Small beetsΒ (2” diameter) – 20 minutes
  • Medium beetsΒ (2 1/4” diameter) – 25 minutes
  • Medium-large beetsΒ (2 1/2” diameter) – 30 minutes
  • Large beetsΒ (2 3/4” diameter) – 35 minutes
  • Extra Large beetsΒ (3” diameter) – 40 minutes
