Banana Bread

Part snack, part treat, part breakfast. Mostly a great way to use up bananas.

Ingredients

  • WET INGREDIENTS

  • 1.33 cups mashed Banana, about 4 large bananas, mashed

  • 2 tablespoons ground Flax Seed (or, eggs?)

  • 0.33 cup plant-based milk, such as Almond Milk or Soy Milk

  • 0.33 cup Coconut Oil

  • 2 tablespoons pure Maple Syrup

  • 2 teaspoons pure Vanilla Extract

  • DRY INGREDIENTS

  • 0.33 cup Coconut Sugar

  • 0.5 cup rolled Oats

  • 1 teaspoon Baking Soda

  • 1/2 teaspoon Baking Powder

  • 1/2 teaspoon fine sea Salt [link]

  • 1.5 cups Wheat Flour, all-purpose white

  • TOPPINGS (OPTIONAL)

  • Chopped Walnuts for topping (optional)

Method

  • Mash bananas until smooth, make sure you have the right amount
  • Melt coconut oil
  • Combine all wet ingredients.
  • Add the sugar to the wet ingredients
  • Add the oats to the wet ingredients.
  • Sift the baking soda, baking powder, salt, and flour together. Then add them to the wet ingredients.
  • Spoon into a greased 9 Γ— 5 inch loaf pan, then add your toppings
  • Bake for 45 to 55 minutes at 350 ˚F.
