Method

  • In a mixing bowl, combine almond butter, maple syrup, cinnamon, salt, and vanilla extract. Blend together until thick and creamy.
  • Stir in oats, ground flaxseed, and chocolate. The batter is typically difficult to stir at first, it should get a little easier as it hydrates. If after stirring a while it still feels too dry to clump together into balls, add a teaspoon of soy milk at a time until it starts to form.
  • Flatten the mixture into the bottom of the bowl. Use a knife to divide into 12 equal parts. Then scoop each part out and form it into a ball. The mixture might be a little sticky! But the stickiness is worth it, it means the liquids and oils will soften up the oats and make these tasty lil treats easier to digest.
  • Roll the balls in hemp hearts. Helps a bit with the stickiness! Cocoa might work instead, if you're into chocolate.
  • Store in the fridge in a sealed container for up to a week or so. Or freeze and they'll last longer, just thaw at room temperature the day before you wanna eat them.
